The problem
TemakHouse ran a real restaurant on spreadsheets held together by hand. Cash closeouts were photographed at night and typed in the next morning. Invoices went into the books one line at a time. Payroll was computed by hand. And money landed from five platforms at once, so reconciling a single day meant opening Toast, Square, Stripe, DoorDash and Uber Eats separately and stitching them together. All in, the books ate more than thirty hours a week, and the monthly close dragged on for days.
